Baked Chicken and Rice

This recipe is an easy and healthy weeknight meal that's also delicious!  Health food that doesn't taste "healthy" if you know what I mean... :-)  I decided to omit the orange juice and just use more chicken broth in its place.  I should have payed attention to some of the reviews regarding the rice - it does not fully cook in the oven this way.  Next time I think I will make this in the slow cooker or at least partially cook the rice before combining in the oven.  You could also just prepare on the stove top in a pot.  Despite the disappointment with the rice, the flavors come together really well in this dish...  Not to mention all the awesome health benefits of parsley!
