I have always wanted to make my own cauliflower soup - it's so creamy and filling but still relatively healthy... What's not to like? This recipe pairs the soup with a prosciutto sandwich (a divine combination). For the sandwiches, I used an arugula mix instead of watercress and left out the olive oil...
To puree the soup mixture, you will need a blender (I used a normal blender, however an immersion blender would have been really handy)
